View hidden applications

When I use the dock view in Air Mouse Pro to switch to an application which is hidden, I can't work out how to show the app, other than using the mouse to click on the dock icon on my Mac.

I would like to be able to switch to and show an application using only the application icons in Air Mouse Pro on my iPhone - is that possible?

Do you mean when you minimize a window into the dock, it's not showing up when you click that icon in the dock on the iPhone? If so, you have to set your dock prefs not to minimize windows into the dock, so when you switch to an application all the windows show up.
